Low Dollar sells a remote sensor mount. I’ve run all my MAPs directly on the intake without an issue but nothing wrong with remote mounting.

Can’t go wrong with the TX. Lots of functions that simplify everything. Launch retard + boost control alone helped me cut my times down in no prep
Your lesrn fuel table looks good. You can go into the closed loop and learn tabs and reduce the amount of learn. It's set at 50% by default, since your Learn is close I'd go set it to like 10% from like 3500 rpm and lower. Then do the same after you tune wot and boost areas. After mine was dialed it set it to 5% because if an o2 goes bad or something happens that effects the fuel table it will keep it within set percentage and keep your fuel table good. You can also set the gain on how fast or slow it Learns. You can also go watch Joe Simpsons tuning videos on here, I've learned alot from him over the years on holley tuning
I'd be doing like you are to let the learn get you close. I like to take small swings to get it tight. Make adjustments manually, ie…if it's +8%, I'd add 4% and redo the run. I'd bet you don't have +4% after that. Idk what your tables are, I'd leave a lot of resolution in 60-100 kpa for idle, have less for 1-7 lbs. You'll get through that so quickly it won't matter on the tune. Basically make it idle(and coming back to idle), and pulling. So 7lbs to (I think you hit 15-17 lbs?) The max.
Holley is much easier to navigate through than a lot of other tuning platforms
Enjoying the ride bud, and the camera mount as well, she is sounding stout. For sure need some warmer weather
to help out with things, very enjoyable on the video game ride.
I have my 3.5 screen zip tied to the hazard switch right now so the screen is basically right in front of me
